Chapter 2 goes deep into the worlds of the oyster. Following a memorable oyster tasting, the chapter moves ethnographically between a small settlement in Scotland and another on the other side of the world in South Australia. Along the way, we encounter different arguments about tasting as an embodied encounter of oyster and human. This encounter goes beyond the flesh-on-flesh meeting of oyster and mouth to think about how in small places oysters are helping to grow sustainable human communities. The chapter provides new arguments about eating, taste, and interest.
